Pindi Chole or Pindi Chana is a variation or you can say different version of preparing traditional Chole Masala. Where Chole masala is full of gravy, Pindi Chole is dry and of different texture and color. This is one of the delicious authentic Chana Masala which is called Pindi Chole. This recipe is originated from Punjab region of India.
Steps to make Pindi Chole & Kulcha:
- For Pindi Chole - soak the chickpeas for 3-4 hours and drain the water. Boil with black tea water. Set aside, don’t drain the tea water.
- Cut the onions and tomatoes. In a pan heat oil and ghee and add the onions. Fry until brown in colour, add ginger-garlic paste and keep stirring
- Add chopped tomatoes and stir until oil surfaces.
- Add Chana Masala, salt and stir for 5-7 mins. Add boiled chickpeas with the tea water and cover for 15 mins to get a thicker consistency. The Pindi Chole is done
- For Kulcha - in a bowl add Maida, curd, baking soda, baking powder, sugar, salt, water as per need to make a soft dough. Keep it covered for 30 mins
- Make balls and with rolling pin make a thick Kulcha. Brush with water and add chopped coriander leaves, black and white sesame seeds and press it with your palm or with rolling pin. Brush water on the other side too
- In a semi hot tawa place the side which has no coriander leaves and on low flame keep it on, bubbles will arise. Flip side and cover the tawa. 2-3 mins the Kulcha will be done
- Baste with butter and serve hot
- Serve both and enjoy
