- Take For puri:
- Prepare 1 cup whole flour (gehun ka atta)
- Get 2 1/2 tbsp ghee or oil
- Take 1 pinch salt
- Get as required oil for deep frying
- Get For chole:
- Make ready 1 1/2 cups white chick peas
- Prepare 2 medium sized finely chopped onions
- Make ready 1 medium sized chopped tomato
- Make ready 1/2 inch piece of ginger finely chopped or crushed
- Prepare 2-3 cloves garlic finely chopped or crushed
- Prepare 1/2 tsp garam masala powder
- Take 2 tsp amchur powder (dry mango powder)
- Prepare 1 pinch turmeric powder
- Make ready 1 tbsp coriander (dhania) powder
- Take 1 tsp cumin seeds powder (jeera powder)
- Make ready 3 green chilies slit
- Prepare As required Oil
- Make ready as per taste Salt
- Get 2 tsp chilli powder
- Prepare 1 tsp cumin seeds (jeera)
- Take 2 tsp chole masala
Prepared with chickpeas (channa) aka garbanzo We generally eat chole as a evening snack garnished with chopped onions and coriander leaves or eat it. Puri (also spelled Poori) is a deep-fat fried bread made from unleavened whole-wheat flour that originated in the Indian subcontinent. It is eaten for breakfast or as a snack or light meal. It is usually served with a savory curry or bhaji, as in puri bhaji, but may also be eaten with sweet dishes.
Instructions to make Puri Chole Meal:
- Combine the whole flour, 2 tbsp of ghee or oil and salt and knead into a stiff dough using enough water.
- Knead again with the remaining 1/2 tbsp of ghee or oil and cover and keep aside for 10 to 5 minutes.
- Divide the dough into 12 equal portions and roll out each portion into 75 mm. (3″) diameter round.
- Heat the oil, and deep fry puri’s at a time till they turn golden brown colour from both the sides.
- Drain on an absorbent paper and serve hot with chole.
- For Chole:
- Pressure cook kabuli chana with salt and 3 -4 cups of water till it's completely soft.
- In a pan, heat oil & add cumin seeds, let it splutter.
- Add ginger, garlic and onions & saute till it's golden brown, now add tomato and cook till it becomes soft.
- Add chole masala, salt, turmeric powder, coriander powder, chilli powder,cumin powder, and green chilies and saute for a while.
- Now add kabuli chana with it's stock & mix and cook for few minutes.
- Add dry kasuri methi crushed and amchur powder, let it simmer for 5 minutes until the gravy thickens and you get the desired consistency.
