  1. Prepare 1 cup Kabuli chana/chickpeas
  2. Prepare 1 tomato

Pindi Chole or Pindi Chana is a variation or you can say different version of preparing traditional Chole Masala. Where Chole masala is full of gravy, Pindi Chole is dry and of different texture and color. This is one of the delicious authentic Chana Masala which is called Pindi Chole. This recipe is originated from Punjab region of India.

Instructions to make Pindi Chole:
  1. First pre soak the chana overnite. Then while boiling in a pressure cooker add the tea bags. Give 6-7 whistle. Till the chana becomes soft. Now remove it from the stock. Reserve the stock
  2. Now first we need to dry roast whole jeera, awjin, green and black cardimaom, black pepper, dalchini, cloves, javitri and jalfal and bay leaf. Now let it cool and make a fine powder. Now in the kadi you will cook add the chana, then anar dana powder, dhaniya, amchur, the fine powder mix, black salt, redchile powder and kashmiri red Chile powder,turmeric. Mix them well.
  3. Now to this chana add julines of ginger, onion, tomato and slit green chiles. Also chopped coriander leaves. Mix them well. Now in another pan add the oil and ghee when it comes at the smoking point.
  4. Now add this oil to the chana. Put on the gas. Now add the reserve stock. Cover it. If required you can add more water if the stock is not enough. Now cover and let it cook for 15-20 min. Serve it with hot bhature.
