The ingredients needed to make Kaju Katli/Cashew Burfi:
- Prepare 1 cup cashews
- Prepare 1/2 cup sugar
- Get 1/4 cup water
- Take 1/4 tsp cardamom powder
- Prepare 1 tbsp ghee

Steps to make Kaju Katli/Cashew Burfi:
- In a Mixer Jar, add cashews and Grind to a smooth powder. However don’t over grind it else cashews will release oil, you don’t want cashew butter! 🙂 - You can sieve if there are coarse pieces of cashew.
- Add sugar and water in a pan on medium heat and let it boil for 3 mins. Stir the sugar syrup till it forms 1 string consistency as shown.
- Then lower the heat and add in the cashew powder, cardamom powder. Stir to combine.
- Keep stirring the mixture on low heat. Add a teaspoon of ghee and stir. Ghee makes the mixture smooth and also adds some shine to the katli.
- Keep stirring, after around 10 minutes on low heat, the dough will leave the sides of the pan. This is the stage when you want to remove pan from heat. - - You can check if the dough is done or not by taking a small piece from mixture, let it cool down a little and then roll it between your thumb and index finger. You should be able to make a non-sticky ball out of it.
- Once the dough is done, transfer it to a plate/parchment paper and let it cool down for 3-4 mins.
- Then knead the dough with your hands to make it smooth. You have to knead the dough while its warm. Also if the dough looks very dry while kneading, you can sprinkle some water or milk to make it smooth.
- Then place another sheet of parchment paper on top of the dough. Roll to 1/4 to 1/2 inch thick using a rolling pin. Use silver vark if required. Then, Cut the dough into diamond shape and arrange it on a plate.

Kaju Katli (kaju burfi, cashew barfi) is the only South Indian sweet that TH would eat and so I try to make it during Diwali time. I have made kaju katli twice before this. entire cashew burfi has to be prepared on low flame. finally, instead of butter paper you can also use plastic sheet or you can also grease the plate to prepare kaju katli or kaju barfi.
