The ingredients needed to make Chole puri:
- Get 500 gms Chickpea
- Get 1 cup Clarified butter / ghee
- Take 2-3 Whole red chilli
- Make ready 1 tsp Whole coriander seeds
- Make ready 1 tsp Cumin seeds / jeera seeds
- Take 2 medium Chopped onion
- Prepare 1 tsp Ginger garlic paste
- Take 3-4 Black pepper
- Make ready 1" Cinnamon stick
- Take 1 piece Mace / javitri
- Get 3-4 Whole cloves
- Take 4 Green cardamom
- Take 1/2 tbsp Anardana / pomegranate seeds
- Get 1/2 cup Tomato paste
- Take 1 tsp Chole masala powder
- Take 1/2 tsp Turmeric powder
- Prepare to taste Salt -
- Get 1 tbsp Chopped coriander leaves
- Prepare 1 tbsp Baking powder
- Take 1 cup All purpose flour
- Take to taste Salt
- Get 2 tbsp Clarified butter
- Get as needed Clarified butter - for frying

Recently I tasted a big sized, puffy Chola poori with chana masala in Hotel Saravana bhavan,Salem. Actually speaking, Punjabi special chole bhatura was in my try list for years. Chole bhature (Hindi: छोले भटूरे) is a food dish originating from northern India.
Instructions to make Chole puri:
- Dry roast whole red chilli,whole coriander seeds,green cardamom,whole cloves,cumin seeds,black pepper,mace and cinnamon and lastly add anardana / pomgranate seeds. - I
- In a blender add all dry roasted garam masala to make a fine paste.
- Soak chickpea over night and add 1 tbsp of baking powder.
- Pressure cook with salt and 2 cup of water for 10 mins.
- Drain the chickpea and store the water
- Heat clarified butter / ghee in a pan fry the sliced onion till brown.
- Add ginger garlic paste,chole masala,turmeric powder and saute for 2 - 3 mins.
- Add tomato paste and saute for 2 - 3 mins.
- Add anardana /pomegranate seeds,salt and mix well.
- Now add poiled chickpea and saute for 3 - 4 mins
- Add chickpea water.
- Add roasted garam masala and cook simmer for 10 mins.
- Garnish with coriander leaves.
- Serve chole with puri
- For puri
- Take a large bowl add all purpose flour,salt and 2 tbsp clarified butter and mix well
- Make a crumble texture.
- With the help of little water make a stiff dough.
- Keep aside for 15 mins.
- Divide the dough into balls and roll out luchi.
- Heat clarified butter in a pan.
- Deep fry the luchi in hot oil until golden and crispy
