Rajma is kidney beans curry which is made by pressure cooking raw kidney beans which are soaked overnight. The pressure cooked beans are then cooked I am sure most people who grew up around Delhi, would swear by the melt-in-mouth texture of rajma chawal (rajma and rice) being served at. Rajma Chawal - One Pot Beans and Rice using Pot-in-Pot Method (PIP). Be it a lazy morning or busy start to the day, recipes that are suitable equally for both the occasions are my favorites.
Instructions to make Rajma(Kidney beans) and Rice:
- Soak the rajma in sufficient water overnight. Next morning clean and pressure cook. - Let the cooker cool naturally. Mash the boiled rajma with a masher.
- In a pan heat 1 tbsp oil. Add shahjeera and let it splutter. Add all whole garam masala, bay leaf and cook in medium heat till aroma comes. - Now add chopped onion, garlic ginger,green chili and tomatoes,salt and turmeric. Cook till soft and allow them to cool. Grind this to fine paste in a grinder.
- In the same wok heat rest cooking oil and ghee. Cook in low, medium heat till oil separates from masala. - Now add rest dry masala and boiled rajma. Adjust salt and water for gravy. Cook 3-5 minuter with cover.

This is a quick recipe and it can be made even more simpler if you have canned beans and cooked (leftover) rice on hand. These useful spices can be used to cook so many different meals!
