Rajma is kidney beans curry which is made by pressure cooking raw kidney beans which are soaked overnight. The pressure cooked beans are then cooked I am sure most people who grew up around Delhi, would swear by the melt-in-mouth texture of rajma chawal (rajma and rice) being served at. Instructions to make Rajma(Kidney beans) and Rice:
  1. Soak the rajma in sufficient water overnight. Next morning clean and pressure cook. - Let the cooker cool naturally. Mash the boiled rajma with a masher.
  2. In a pan heat 1 tbsp oil. Add shahjeera and let it splutter. Add all whole garam masala, bay leaf and cook in medium heat till aroma comes. - Now add chopped onion, garlic ginger,green chili and tomatoes,salt and turmeric. Cook till soft and allow them to cool. Grind this to fine paste in a grinder.
  3. In the same wok heat rest cooking oil and ghee. Cook in low, medium heat till oil separates from masala. - Now add rest dry masala and boiled rajma. Adjust salt and water for gravy. Cook 3-5 minuter with cover.
