Phutka/ Rugda is one of the most favored of current trending meals in the world. It is simple, it’s quick, it tastes yummy. It’s appreciated by millions daily. Phutka/ Rugda is something which I have loved my entire life. They are nice and they look wonderful.
To begin with this particular recipe, we have to prepare a few ingredients. You can have phutka/ rugda using 11 ingredients and 6 steps. Here is how you cook that.
The ingredients needed to make Phutka/ Rugda:
- Take 250 gms Phutka/Rugda
- Take 4 Onions medium sized
- Make ready 1 tsp Garam masala powder
- Prepare 1 tsp Ginger garlic paste
- Prepare 1 tsp Kitchen king
- Get 1 tsp Turmeric powder
- Take 1/2 tsp Red Chilli powder
- Take 2 green chillies
- Get to taste Salt
- Take as required Oil to cook
- Take as required Water

Steps to make Phutka/ Rugda:
- Take the phutka and wash it in running water till all the mud gets cleaned.
- Cut it into halves. Heat 2-3 tbspn oil in a pan and add green chilli and phutka to it. Shallow fry them till 4-5 minutes.
- Take all the spices as mentioned above
- Take 4 medium sized onion. Cut it and fry it until it turns golden brown.
- Let the onion cool down. Then grind it to a fine paste.
- Take a pan and add 2-3 tbspn oil to it. Add all the spices to it and stir it till 2 minutes. Further add the onion paste to it and cook it for next 3-4 mnts. When the spices start leaving oil, add the fried futka to it. Lastly add salt and water to make gravy. Bring it to a boil. Sprinkle some coriander leaves over it and your phutka is ready to be served. Have it with paratha, naan or plain chapati.
It's a rare eatable which is found during early monsoon exclusively in the lands of Jharkhand. Rugda is prepared using different mushrooms and spices served with the combination of rice or poori.
