Steps to make Masala dosa:
  1. Batter preparation : Firstly in a large bowl take rice, methi rinse well and soak in enough water for 4hours.
  2. Ln another bowl take urad dal, toor dal rinse well and soak in enough water for 2hours.
  3. After soaking drain off the water and transfer to the grinder or mixi. Add water as required and blend to smooth paste. In a same mixi add rice and rinsed poha add water and blend to a coarse paste. Transfer the rice batter to the same urad dal batter mix well and well combined.
  4. Ferment in a warm place for at least 8hours or until the batter double in volume.
  5. Once the batter is well fermented mix gently without disturbing the air pockets. Add salt mix well until the salt is well combined. Masala dosa batter is ready. Keep aside.
  6. Aloo bhaji preparation : In a pan heat oil and splutter mustard seeds, curry leaves, cumin seeds and green chilli also add onion and saute until onion shrink slightly. Add turmeric and salt saute well. Now add potatoes and mixwell. Aloo bhaji is ready.
  7. Masala dosa preparation : Firstly add a ladleful of batter on hot tawa. Spread as thin as possible take butter and spread. Sprinkle red chilli powder.Place 2tsp prepared aloo masala in centre. Roast until the dosa turn golden brown.
  8. Scrap the sides of dosa and roll the dosa.
  9. Masala dosa ready to serve with coconut chutney or sambar. Thank you
