  1. Get 2 cups Rice
  2. Prepare 1 cup Toor dal
  3. Get 1 Onion
  4. Get 1 Tomato
  5. Prepare 2 Green chillies
  6. Prepare 6 Garlic cloves
  7. Get 1 bunch Keerai as per your choice can use (arai keerai, palak, siru keerai and paruppu keerai)
  8. Get 1 small goli Tamarind (take the extract)
  9. Prepare 1 tsp Oil
  10. Make ready 8 cups Water (6 cups for rice and 2 cups for dal)
  11. Prepare For tempering
  12. Take 2 tsp ghee / oil
  13. Take 1/2 tsp mustard,
  14. Get 1/2 tsp urad dal
  15. Get 1/2 tsp fenugreek
  16. Make ready 1/2 tsp jeera
  17. Get pinch asafodetida
  18. Prepare 2 red chillies

Wash greens (keerai) and chop it finely. Slit the green chillies into two. The greens (Keerai) will get cooked in its own water content. Stir fry till all the water content in the Keerai is absorbed.

Instructions to make Keerai sadam/ Greens Rice/ Amaranthus Rice:
  1. Add all the above ingredients in a pressure cooker as per the order given above do not fry them jus add raw and add water and bring it to a boil so that tamarind raw smell goes away and then cover the pressure cooker put on high flame once the pressure comes put on the weight and simmer the flame for 10 mintues and switch off the stove and let the pressure release on it's own.
  2. Add ghee / oil or fully ghee Add mustard, urad dal, fenugreek, jeera, asafodetida and red chillies
  3. Note: I have used normal ponni rice I use 3 cups of water for cooking rice so according water needs to be adjusted and I have used arai keerai.
  4. Soak rice and dal together in water for 30 minutes.

Add the cooked rice and mix well. Green leaves are always rich in iron, folic acid and calcium. This green leafy vegetable is known as pasalai keerai in tamil. Spinach Rice is a easy quick Lunch box recipe that can be prepared with left over rice. I have used basmati rice for Spinach Rice preparation.
