- Get 2 tsp Oil
- Make ready For Dum aloo
- Prepare 1 cup Baby dum aloo
- Prepare as per taste Salt
- Take as required Water
- Get 2 Tomatoes
- Prepare 2 Onions
- Prepare 4 cloves Garlic
- Take 1/2 tsp Ginger crushed
- Make ready 1/2 tsp Cumin seeds
- Take 1/2 tsp Turmeric powder
- Make ready 1/2 tsp Red chilli powder
- Make ready 1/2 tsp Coriander powder
- Take 1/2 tsp Chat masala
- Make ready as per taste Salt
- Make ready 1/4 tsp Sugar
- Get 1/2 tsp Dum aloo masala
- Take 3 tsp Oil
- Prepare For For smoke–
- Take 1 small piece of coal
- Take 1/4 tsp ghee
Luchi and aloo dum have become a fortnightly breakfast at home. so I make the Bengali aloo dum in two ways. here is the onion-tomato version. There is another variation made with yogurt which I will also post. My favorite is this onion-tomato version which is posted here. Aloo pulao is a very simple dish which has a lovely aroma on pureed onions through out the rice.
Steps to make Smoky Dum Aloo Pulao:
- First, boil the rice in water and add salt, lemon juice,tez patta, cardamom. This will give white and non sticky rice.
- Boil till it is done 80%. Rest 20% they will cook while making pulav. Take out the water from rice and cool them so as they do not break while roasting.
- For pulav. Heat oil in pan. Add cumin seeds, Mustard seeds, onions, tomatoes. Toss a little.
- Add red chilli powder, turmeric powder, javitri, jaifal, cinnamon powder. Mix well. Add salt and sugar. Add boiled 80% rice. Toss a little.
- Close the lid and cook for few minutes. Put off the flame. Rice is 100% cooked
- Burn coal till red. Keep coal in a small dish. Open the lid of prepared Pulav. Keep the dish with coal on pulav. Pour ghee on coal. Close the lid for five minutes.Smoke is released.
- After five minutes remove the coal smoky flavour mix in pulav. Toss the pulav. Empty in another pot. Smoky pulav is ready
- For Dum aloo : pressure cook baby aloo in salt and water. Once cooked cool and peel them.
- In a pan take little oil and add baby aloo. Roast till golden yellow. Put off the flame.
- Heat oil in a pan. Add cumin seeds. Next add ginger garlic paste, onions, tomatoes. Mix well
- When oil separates, add red chilli powder, turmeric powder, coriander powder, chat masala, salt, sugar,dum aloo masala. Mix well. Add little water. Cook for few minutes
- Add roasted golden yellow dum aloo. Mix well. Cook for few minutes. Put off the flame.Dum aloo is ready
- In a dish place smoky pulav on sides and in between dum aloo. Serve hot with kadi.
I make pulao differently each time and this is one of my favourite recipe. It is pretty mild and taste great with any spicy curries or raita.
