Steps to make Egusi Soup:
  1. Wash your meat and seasoned,then put to boil after awhile add in the cow skin let it boil for some minutes and set aside. Also boil your shrimps and throw the water away
  2. Blend your pepper boil till water dry
  3. Put pot on gas and add in palm oil let it saute alittle then add in dice onions and locust beans at the same time let it saute to infused the locust beans scent inside the oil
  4. Then add in the boil pepper and fry till oil float add in the stock cube and Maggi crayfish and fry a bit.
  5. Make a water paste of the Melon&blend crayfish,you can add little meat stock to the paste,cut it into the fry pepper and let it fry. Note,don't stir much to avoid the lumps from breaking.
  6. Add in little water,the cow skin,meat and let it cook for 8_10mins
  7. Add in the wash Pumpkin leaf and the shrimp. Make sure you don't cover the pot again to maintain the vegetable greenish
  8. Taste and adjust with salt if necessary
  9. Put down and served with desire swallow or Rice.
