This ofada stew/ofada sauce recipe features a stew that originates from the Western part of Nigeria and is commonly eaten with a locally grown rice called ofada rice. Ofada stew is also known as ayamase stew or designer stew; it can be prepared with green bell pepper, with red bell pepper or even with the combinations of both. Ofada Rice and stew is a Nigerian meal native to the Yorubas but in recent times, everyone, especially those in Lagos and environs, has been bitten by the Ofada Rice bug.

The ingredients needed to make Ofada Stew:
  1. Take 40 pcs red pepper (Ata dudu)
  2. Get 7 green capsicum peppers(tatashe)
  3. Prepare 1/4 cup locust bean (Iru)
  4. Make ready 1 cup Palm oil,
  5. Prepare 4 bulb Onion,
  6. Make ready 1/2 cup Crayfish
  7. Get 2 kg Assorted meat (Beef, Shaki, kpomo and kpanla smoked fish)
  8. Take 4 knorr cube
  9. Get to taste salt

It is also called abakiliki rice. it is delicious. Nigerian Ayamase / Ofada Stew Recipe. Funny enough, the Ofada sauce got it name from the local rice it is usually served with (Ofada rice), the sauce itself is called Ayamase. Begin this Nigerian stew by blending and straining green bell peppers, onion, and habanero If you'd love to recreate the spicy flavors of ofada stew, gather a few specialty ingredients and get started!

Instructions to make Ofada Stew:
  1. Wash and blend the pepper, tatashe, crayfish and the onion. Remember to remove the seeds from the tatashe. Cook your meat adding 2 knorr cube, salt and cook till meat is soft and tender.
  2. Pour the blended pepper into a separate pot and cook on high heat until all of the water dries up.
  3. Pour the red palm oil into a clean, dry pot and bleach until it turns clear. It should look like vegetable oil when done.
  4. Leave the oil to cool down a bit and then add the boiled pepper puree; fry the mixture until all of the water has evaporated.
  5. Add iru, the remaining knorr cube, salt, then meat and fish, and stir well, leave to simmer for another 10mins and it is ready to be served.
