- Take 2 cups Hung curd
- Make ready 2-3 tbsp Powder sugar
- Make ready 1 pinch salt
- Get 3 tbsp Green mint chutney
- Get For Sweet and sour orange chutney :
- Prepare 600 ml Orange juice
- Take 6 tbsp Sugar
- Get 5 pieces Black pepper corns
- Make ready 2 pieces Cardamom
- Make ready 2 cloves
- Prepare 1 piece star anise
- Make ready 1 inch Cinnamon Stick
- Make ready 1/4 tsp + 1 pinch Black salt

- Prepare few Grilled paneer slices

- Heat a non-stick saucepan, add orange juice, black peppercorns, cardamom, clove, star anise, nutmeg powder, cinnamon stick, boil it on medium heat for 10 to15 mins and stir this continuously. - In a mixing bowl, add hung curd, sugar and salt, mix well to get a creamy texture. Bring a bowl, add half in the bowl, add mint chutney and mix well. Bring 2 piping bags, in one piping bag add plain curd and in another bag add mint flavoured curd and keep this into the refrigerator.
- Making Tikki:: In a mixing bowl, add coarsely crushed peas, grated paneer, mashed potatoes, cornflour, green chillies, ginger paste, coriander leaves and mix well. Add all the dry ingredients in this mixture, mix well. Divide the mixture into equal portions and shape them into round tikkis. Heat sufficient oil in a non-stick kadhai and shallow fry the tikkis, a few at a time, till golden brown. Drain all the tikkis on absorbent paper. Tikkis (patties) are ready. Mastani Chat is ready to serve.
