- 1st boil full cream milk and ferment it with little curd..lets ferment…it would take approximately 3 to 4 hrs…depends in the climate too….If you are too lazy to prepare curd, buy sour less curd and make the lassi…but remember curd should not be sour
- Lets make the mango topping first…for that prepare 1 cup of the mango pulp…. You can separate the pulp of mango and grind it in the mixy…. Take this pulp 1 cup and add into the hot kadai…then add the chopped mangoes
- Now add 1 cup sugar…let it boil on high flame for 20 mins…dont stop stirring….it may get burnt at the bottom….
- After 20 mins…. it would have become glassy and thick…almost like jelly….dont cook it more than 20 to 25 mins…and then it's done
- Now lets decorate a glass for the lassi… Take rose syrup 1 tbsp and add it on sides of the glass…rotate the glass on all sides and let it flow….now free this for 20 mins…make this for all four glasses
- Meanwhile lets make lassi….add 1 cup curd…. grind the mango pulp separated along with mentioned quantity of sugar together(grind without adding any water)measure 1 cup and add mango pulp to the curd
- Beat well until it is uniform all over…and then add 1 tbsp of the mango topping
- Add some chopped mango pieces to lassi
- Now take the freezed glass and add 1 tbsp rose syrup and then add a layer of mango pulp
- With a spoon spread some mango topping on sides of glass for decoration
- Then pour the lassi until it fills 3/4th of the glass…
- Spread A tbsp of mango topping
- Add the grated chocolate and over that add sliced badam and serve chilled(chill it for 2 hours)
