  1. Prepare lemon
  2. Prepare Black Salt

  8. Get seeds ajwain or to taste

  1. Wash the lemons and wipe them dry using a dry cloth.
  2. Grind all the dry ingredients together except lemons and sugar. Keep this masala aside. Cut each lemon into four parts. Remove the visible seeds if possible.
  3. Now place the lemons into a dry bowl.
  4. Mix lemon and masala nicely and keep these lemons out in the sun for 2-3 days. Fill this in a jar, close the lid tightly and Keep shaking the jar every day.
  5. After 6-7 days add the sugar to the pickle jar and keep it in the sun for 4-5 more days.
  6. Lemon pickle will be ready in total 15 days. Old is gold,the more older the pickle is the much tastier.

This Nimbu ka khatta mitha achar which I am making today. This sweet-sour (khatta meetha) nimbu achar is prepared with lemons, jaggery and spice powders. This vegan lemon pickle comes from my mom. She is very good at making pickles and every summer making pickles is like a yearly ritual for her. This is the case with many families in India.
