  29. Prepare 100 gms Surti Papdi (Vaal)
  30. Take 4-5 Brinjals
  31. Prepare 4-5 Baby Potatoes
  32. Get 1-2 Sweet Potatoes
  33. Take 1 small piece Purple Yam(Ratalu)
  34. Take 2-3 Raw Bananas
  35. Make ready 10-12 Ivy Gourd (Tindora)
  36. Prepare 2 tsp Oil
  37. Get 1 tbsp Ajwain/carom seeds
  38. Prepare 2-3 tbsp Sesame Seeds (Til)
  39. Take Pinch Hing
  40. Make ready 2 tsp Water
  41. Prepare to taste Salt
  42. Prepare 1 tsp Sugar
  43. Take 1/2 tsp Red Chilli Powder
  44. Make ready 1/2 tsp Garam Masala

The name "Undhiyu" is derived from the Gujarati word "undhu" which means upside down. Undhiyu, a traditional Gujarati curry prepared with many fresh vegetables and dhokli muthiya, is a must have item on festivals like Uttarayan (kite flying festival), Diwali, etc. Undhiyu is a one pot vegetable casserole dish that is the hallmark of Gujarati vegetarian cuisine. Generally preparing undhiyu takes a lot of time and needs patience.

Steps to make Gujarati Undhiyo!:
  1. Muthiya - Mix all ingredients listed for muthiya in a mixing bowl except oil for frying. Gently make muthiya's and deep fry them and keep aside.
  2. Masala : - In a mixer grinder jar, take freshly grated coconut, green lasun, green chillies, a small piece of ginger, coriander, lemon juice. Make a paste adding little water if required. In a mixing bowl take finely chopped methi. Add this paste to it. Add haldi, red chilli powder, dhania jeera powder, garam masala, salt, sugar. Mix all well. Masala for undhiyo is ready.
  3. Cut and keep aside all the vegetables. Cut bananas in big pieces. Stuff brinjals and bananas with masala. Add all the vegetables except muthiyas to masala. Mix all well.
  4. In a big pressure cooker, heat oil. Add ajwain and pinch of hing. Saute for few seconds. Add vegetables mixed with masala. Mix well. Take very water. Add salt, sugar, haldi, red chilli powder, garam masala to water and mix well. Add this water to vegetables and give it a good mix. Pressure cook for 2 whistles.
  5. Then in a broad pan heat oil. Add ajwain and sesame seeds. Once it crackles, add cooked Undhiyo in pressure cooker and mix all well. Add prepared muthiyas and again mix well and cook for 1-2 minutes.
  6. Garnish with green garlic and serve hot with roti.

Undhiyu is most popular mixed vegetable Gujarati dish. Traditionally Undhiyu cooked in upside down matlu(pot). There are many variant of undhiyu like Surti Undhiyu.
