If you prefer crunchy bitter gourd then fry them without covering stirring often. Teto Bhaja aka Uchchhe Bhaja literally means fried bitters and it's a part of traditional Bengali delicacy. I can imagine how horrified face you have now there. Uchchhe is known as bitter gourd in English; so is the Karela but both things are not same.
Instructions to make Fried Bitter Gourd or Karela Bhaja:
- Mix karela roundals with 1/2 tsp salt, mix it well. Keep aside for an hour.
- Now wash karela pcs, strain it so that extra water is removed.
- Take a wok, add oil, heat it. Deep fry karela pcs till light brown. Do not over cook it. Keep aside.
- Now fry onions in the same oil till light brown. Keep aside.
- Remove the excess oil from the wok, heat it.
- Add panchphoren, sauté it for a sec.
- Add karela & onion, stir it for a while. Sprinkle some salt.
- Now add all powdered masala, mix well. Stir it for a while.
- Switch off the flame now, take out in a serving bowl, have it with Paratha.
- All cooking is done at high flame.
