Steps to make Chicken Mappas (With Fried Potatoes):
- Wash and drain the chicken.
- Heat a pan to medium heat and add few tablespoons of oil.
- Now add the diced potatoes and cook it until it turns golden brown on all sides. Drain these on a kitchen paper.
- Add little more oil to the same pan. Add cinnamon sticks, cardamon pods, cloves and fennel seeds.
- Saute for around one minute until it leaves aroma.
- Add onions to the above and saute till it turns golden brown.
- Now add the minced garlic and ginger and saute till the raw smell goes off.
- Add the finely chopped tomatoes, green chillies and salt to the above. Cover the pan and cook it for 5 minutes till the tomatoes becomes soft and mushy.
- Add Coriander powder, pepper powder and turmeric powder and saute for couple of minutes.
- Add chicken to the above and mix well until the chicken gets coated well with the masala. Add water if you need. Cover the pan and cook till chicken becomes tender.
- Add the thick coconut milk,garam masala,fried potatoes and curry leaves. Mix everything and allow it to cook for 4-5 minutes.
- Serve hot with rice, appam, chappati or bread.
