  2. For the Sugar Syrup:In a medium sized pot add water & sugar.
  3. Cook just until the sugar has completely dissolved.
  4. Take off from heat and set aside.
  5. For the Suji Ka Halwa Base:In a large heavy based pot, heat the ghee.
  6. Then add the crushed cardamom pods.
  7. Then Add the semolina (suji).
  8. Cook for 2-3 minutes until it releases a nutty aroma.
  9. Then Pour in the sugar syrup and cook the suji ka halwa for 2-3 minutes.
  10. The halwa will still be very liquidy and bubbly.
  11. Do not cook any longer than 2-3 minutes and take off heat immediately.
  12. Cover with lid.
  13. Let rest for 10 minutes.
  14. After 10 minutes the semolina will have absorbed extra liquid and be in perfect consistency.
  15. Top with pistachios & Raisins.
