Instructions to make Gujarati undhiyu:
  1. Take all assorted vegetables which u like to have in undhiyu more veggies the more delight u can use wide variety of veggies like brinjals cauliflower cabbage pointed gourd and beans and greens available chopped them and make ready.
  2. Heat oil in cooker add mustard seeds hing curry leaves ginger garlic paste tomatoes and saute well.add masalas like turmeric powder chilli powder coriander powder salt undhiyu masala garam masala etc and give it mix on medium flame now add some water and all assorted vegetables and beans and close the lid of cooker and make 2/3 whistles till all veggies becomes tender.
  3. Meanwhile prepare muthiyas ie specially add item for this curry for that mix gram flour and fenugreek leaves pinch soda lemon juice sugar garam masala turmeric powder chilli powder coriander powder salt undhiyu powder etc and make round balls deep fry this round balls and keep aside.
  4. Now add this muthiyas ie round methi balls into our assorted veggies curry and make 1 whistle and finally garnish with coriander leaves and enjoy with puri or rotis.
