Instructions to make Thukpa (Noodle Soup):
  1. Heat oil in a pan and saute the garlic till it changes colour. Add the chicken cubes, 3 1/2 cups water and bring it to a boil.
  2. Add the noodles and boil for a minute. Add the bell peppers, onion, salt, pepper, chilli powder and chilli sauce. Let it boil for a minute.
  3. Now add the bok choy and simmer further for a minute. Switch off the flame and add the lemon juice. Mix well.
  4. Serve in individual bowls. Garnish with the shredded omelette and spring onion.

Thukpa is common Tibetan noodle soup that's found throughout Nepal, especially around the Boudhanath stupa area. Boudhanath, or the Boudha Stupa, in Kathmandu. Thukpa is one of my favourite dishes. I had it for the first time in Nainital, a hill station in India. Was remembering it and made an illustration of it with my favourite muse, a frog.
