Instructions to make QUICK & EASY FISH FILLET STEW:
- In a pan or sufuria add in the cooking oil and onions and sauté till they are tender and some have a brownish color to them.
- Add in your tomatoes and cook till they are very soft and have produced their juices.
- Add in the carrots and cook for just a minute to retain the texture in them then add in your spices and mix well.
- Add in the minced ginger and garlic and cook for just 30 seconds the add in the tomato paste and cook for an additional 30 seconds.
- Add in the milk and water and bring it to a boil. Milk is optional so you can just use water.
- Add in the fillet one at a time. This is the only stage where we’ll give it a good mix because once it is cooked all the way through it will be impossible to continue mixing to avoid them splitting. Cook them for about 5 - 7 minutes then add in the bell pepper and cook for an additional 1 minute.
- Switch off the gas, add in the coriander and serve.
