Instructions to make Panchratna dal (Bengali style):
- Roast the moong dal in a kadai.
- Soak mung dal, masoor dal, arhar dal, chana dal, matar dal for 5 hours.
- Drain the water and sprinkle ghee and salt.
- Keep aside for half an hour.
- Heat ghee in a kadhai.
- Add cumin seeds, bay leaf, asafoetida, dry red chilli for seasoning.
- Add cumin powder, turmeric powder, ginger paste, celery seeds paste and saute for 1 minute.
- Now add mung dal, masoor dal, arhar dal, chana dal, matar dal.
- Add salt and warm water.
- Cover with lid for an hour on a low flame.
- Add sugar and dry fruits.
- Sprinkle ghee before serving.
So this dal is made with mixture of five different dal vertities. Rajasthani food is my favorite since childhood, though I have not. I love dals, so love to try different types/ variations in dal. Since Aj too loves dal, it is easy to try small variations each time. Sometimes it will be hit, sometimes not so good, but still never settle with a single recipe.
