  2. Prepare 1/2 cup milk (full milk, skimmed milk or soya milk)
  3. Take 1 tea bag or 2 tsp leave tea
  4. Prepare 1/2 tsp dry ginger powder
  5. Prepare Pinch cardamom
  6. Make ready 2 tsp Jaggery powder or to taste

Jaggery Tea - India is known for its famous Chai Tea. There are many variations to this chai, one of which uses jaggery as the sweetener. Jaggery tea or gud ki chai is a traditional Indian tea with jaggery and spices. Here we use jaggery known as gud in Hindi as sweetener in chai instead of sugar.

Instructions to make Jaggery Tea (gur ki chai):
  1. Boil 1 cup of water in saucepan on a medium flame. - Once the water starts bubbling, add tea leaf and dry ginger powder and pinch of cardamom powder. - Reduce the flame to low, and cover the pan with lid.
  2. After 3 minutes, uncover the pan and add milk (if you are Vegan or Vegetarian so you can add Soya milk), Let it boil on low flame. - After 4 minutes, tea is ready and the color becomes little dark brown. Switch off the flame and just wait for 20 seconds. So that temperature of the tea drops a bit - Now add grated gur (jagger) mix it well pour in cup and enjoy !!
  3. Tips: - Do not add Gur(jaggery) when tea is boiling it would curdle the milk.

I first tasted this jaggery tea in Delhi many years back. Then when I started to cook I attempted it once but the tea curdled immediately.
