Just the name brings back great childhood memories and a big smile on my face. Served piping hot this halwa is perfect for cold winters. Grated carrots cooked in ghee, khoya, milk, dried fruits and cardamom.

  1. Get 1 Kg Desi carrots 1/2 Kg Basmati rice 2 Litre Milk

Carrot dessert is a traditional,delicious and sweet dish,Gajrela with Milk is a carrot-based sweet dessert pudding from the indian subcontinent. This is also considered as a gift of winter,gajar halwa and gajrela,this recipe is quite an easy and simple than gajar halwa Gajrela is made with the combination of grated carrots, milk, sugar, clarified butter (ghee), and then garnished with nuts. There is a lot of arm work if you grate the carrots by hand instead of a food processor. I always grate them by hand.

Instructions to make Gajrela:
  1. Grate the carrots. - Soak rice in water.
  2. Now put water in a pot and cook soaked rice and carrots together
  3. When the rice is cooked, then add milk and reduce it to half
  4. And then add sugar. Cook it for 10 minutes and then take it off the flame.
  5. When cold, add green cardamom powder. - heat desi ghee and sute clive one minut
  6. And add tarka on gajrela..
  7. Now - Serve with silver vark on the top and with a almond, garnish.

Carrots are slow cooked in milk until milk has been pretty much cooked all the way down. Put the milk in a wide, heavy based pan and bring it to a boil over high heat, stirring. In Punjab it is know as Gajrela and Gajar Ka Halwa in India generally. It's such a gorgeous dessert and contrary to the belief that a lot of Indian desserts are exceptionally sweet - my version of Gajrela is not laden with sugar, as I use condensed milk which add it's own sweetness instead of regular milk and sugar. Gajrela is one of my all time favourite Indian desserts (especially the one my Nan makes) and it is a very popular dessert in India.
