  4. Get 2 tablespoons Potato Starch *mixed with 2-3 tablespoons Water

  8. Take 2 cups Dashi Stock (2 cups Water & 1 teaspoon Dashi Powder)
  9. Prepare 2 tablespoons Sake (Rice Wine)
  10. Get 1 teaspoon grated Ginger
  11. Take 1/2 teaspoon Salt
  12. Get 2 tablespoons Soy Sauce
  13. Take 1 tablespoons Mirin

Oyako means parents and children, like chicken and egg, and don (donburi) means a bowl. It's a whole meal in one bowl.   4. Add the soup and bring to the boil. Taste the soup, and add extra Salt, Soy Sauce OR Mirin as required.
  5. Add Potato Starch mixture, stirring well, and cook until the sauce thickens. Add the lightly whisked Egg slowly in a circular motion into the boiling soup, gently stirring. When the Egg is cooked, remove from heat.
  6. Place drained hot Udon Noodles in a serving bowl, cover with the mixture, sprinkle with the saved finely chopped Spring Onion, and enjoy.

Making oyakodon, dashi plays a very important part! With dashi in it, you can cook proper Japanese Oyakodon! Oyako-don (Chicken and Egg with Rice) 親子丼. Oyako means mother and child, hence the main ingredients, chicken and eggs. My most favourite dish in Singapore is Japanese and called Oyako Don.
