I made it for Easter, along with a spiced lamb roast and a creamy cucumber salad. It's an extremely easy dish to make. I did make one small addition: a handful of unsweetened coconut added in with the spices at the beginning. This complemented the flavors well, and the mild sweetness of coconut.

Instructions to make Coconut poha with a twist:
  1. First wash the poha drain the water mix salt as required and steam it for ten mins and keep aside. Fill a idli pan with little water and keep the poha in a vessel and steam.
  2. Grind coconut ginger and green chilli and keep aside.
  3. Now take a pan add oil mustard seeds,urad dhal, chanadhal, hing and curry leaves. Let mustard splutter then add peas with salt water close and cook for 5 mins.Add coconut mixture and pepper powder to this and sauté till it leaves an aromat smell. Keep the poha ready by then and add it to the coconut stir well with no lumps switch of the flame and mix in the pomegranate and serve.

Drain and leave in the strainer and keep aside. To this add coconut, jaggery, saffron and cardamom powder. Keep mixing till all the jaggery gets melted and the mixture turns golden brown. An awesome tasting and healthy Coconut aval {poha] makes for a great breakfast choice. The poha or aval is soaked and then cooked with grated coconut, mustard seeds and curry leaves.
