- Clean and wash all the ingredients for up to 3 – 4 times with water to remove all the dust and impurities from ragi. - Soak all the ingredients together in enough water for about minimum 6 hours or overnight.
- Grind them like idli batter. While grinding add enough water to make smooth batter. If it is in large quantities soak them separately and grind all the ingredients separately. Finally mix altogether to form a smooth batter.
- Add salt to taste and set aside for at least 8 hours or overnight for fermentation.
- Boil water in idli steamer or cooker. Take required amount of fermented ragi batter and gently stirred well. Grease the plates with oil and pour the batter in the moulds.
- Place the idli stand in steamer. Cover the lid and steam for 10 minutes. After 10 minutes switch off the flame and allow to cool
- Remove the idlis using a spoon and serve hot with chutney.
