Why this recipe works: Toasting whole spices and aromatics in oil over low heat helps draw out fat-soluble flavor compounds and triggers complex reactions that improves their aroma. Crab Masala: My mom used to make Crab Masala and I used to love it. A few weeks back, I found fresh crab in the market and suddenly remembered this dish so thought of making.
Steps to make Crab masala…yummmm :):
- Firstly wash the crab properly and dice, add a pinch of turmeric powder, mix well and keep aside.
- Take little oil in a pan. Once hot add cumin seeds. Once they crackle, add chopped onion and fry it until brown. Then add slitted green chilli.
- Add ginger garlic paste and stir it for 2 min. Then add tomato puree and stir again.
- Add all dry powder spices like turmeric, red chill, coriander and cumin and fry it until leaves the oil.
- Then add Crab pieces to the masala and stir it for 5 min as it will leave water. Add salt to taste. Cook it for 10 min in simmer with covered lid. The crab changes to orange color after it gets cooked perfectly.
- Before switching off the stove add garam masala and lemon juice mix well. Garnish it with coriander leaves. Serve hot with rice and rasam or can have just like that ;):)…. Enjoy the delicacy!
