  12. Get 15-20 Kaju (cashews nuts)
  13. Make ready As required Salt Cooking oil for frying koftas
  14. Make ready for gravy
  15. Prepare 5 onions chopped
  16. Get 2 green chillies (can add more)
  17. Take 1 tbsp. Chopped ginger
  18. Prepare 1 tej patta (bay leaf)
  19. Prepare 1 pc dalchini (cinemmon stick)
  20. Make ready 3 laung (cloves)
  21. Prepare 2 big black elaichi (cardamom)
  22. Get 2 small green elaichi(cardamom)
  23. Get 1 chakr phool (star anise)
  24. Prepare 1 tsp. Jeera
  25. Get 2& 1/2 tbsp. Fresh cream (approx 30 gm.)
  26. Get 2 & 1/2 tbsp. Whisked yogurt (approx 30 gm.)
  27. Prepare 1 tsp. Coriander powder
  28. Take 1/2 tsp. Black pepper powder
  29. Get 1/2 tsp. Garam masala powder
  30. Get 1/4 tsp. Jeera powder
  31. Get 1/2 tsp kasuri methi
  32. Prepare 1 tsp. Sugar
  33. Get As required Salt
  34. Prepare 1& 1/2 tbsp. Cooking oil

Instructions to make Delicious Malai Kofta:
  1. Let's start by preparing Koftas.. - - In a mixing bowl take 250 gm.fresh grated Paneer, add 200 gm. Boiled & grated potatoes, add 1 tsp. Crushed ginger and green chillies, 1 tsp. Dhaniya powder (coriander), 1/2 tsp. Garam masala powder, 1/2 tsp. Jeera powder(cumin), 1/2 tsp. Kalimiri powder(black pepper) & salt as per taste. Add 1 tbsp. Chopped coriander leaves & mix it well. Now add 2 & 1/2 tsp. Cornflour & with the help of your hand mix all the ingredients properly. It forms like a dough.
  2. Take some cornflour in a dish. Now apply some oil in hands & take small postion of the kofta mixture, make a round ball & press in the middle & stuff 2 pcs. Cashews & some kishmish. Seal the edges together & roll it to a ball shape. Coat it with cornflour gently and keep. Same ways prepare all the koftas. Our koftas are ready for deep frying..
  3. In a nonstick pan heat good amount of cooking oil, as it's hot drop the koftas 1 by 1 in oil carefully, & fry the koftas on medium flame until they turn golden. Fry all the koftas and keep aside.
  4. Now let's prepare it's gravy.. - - In a nonstick pan take 1 cup water. Add 5 chopped onions, 1 green chilli (can add more), 1 tsp chopped ginger, 3/4th cup (approx 65 gm.) Kaju (cashew nuts). Spread it evenly, cover the lid & cook on a medium to high flame for 8 min.  Or until onions & cashews are soft. Remove it from flame & let it cool completely. - Transfer it in a grinder jar and grind it to a smooth paste (paste for gravy is ready)
  5. Let's prepare - - In a nonstick pan heat 1 & 1/2 tbsp. Cooking oil, as it's hot add 1 tej patta (bay leaf), 1/2 tsp. Jeera (cumin seeds), 1 chakra phool (star anise), 2 green elaichi (cardamom), 2 big black elaichi & 1 pc dalchini (cinnamon stick), stir for a second & add grinded paste of onions & cashews.
  6. Mix it & fry till the onions are fried well (fry for approx 5 min.) & add 30 gm. Fresh cream (approx 2 & 1/2 tbsp.) Keep stirring for 2 minutes till both ingredients are mixed well, & add 1 tsp. Dhaniya / coriander powder, 1/2 tsp. Garam masala powder, 1/2 tsp. Kalimiri powder, stir & mix it.
  7. Add 1 tsp. Sugar (can add little more), salt as per taste, & little coriander leaves. Fry for 2 min. & add 1/2 tsp. Kasuri methi, mix it & add 30 gm.whisked yogurd (dahi approx 2 & 1/2 tbsp.) Mix it & add 1/2 cup water, stir & cover the lid, cook the gravy for a min. & it's done.
  8. Let's serve.. - - First pour gravy in a serving bowl, add koftas and again spread gravy on koftas& garnish it with roasted cashews & raisins & some coriander leaves and serve hot with Butter Naan, Tandoori Butter Roti.
