Spinach kofta is a delicious variant of the traditional Kofta Recipes. It is rich with the goodness of spinach and many. Let us start with preparing the kofta balls for the curry first. Clean the spinach leaves, remove the stalk and rinse the leaves with water thoroughly.

Steps to make Spinach Kofta Curry:
  1. Wash & rinse the spinach leaves through fresh water 2_3 times.Roughly cut them
  2. In a mixie,put the spinach leaves with chopped garlic and ginger.Make a smoith puree,no need to add water.
  3. Heat pan,add 1/2 cup besan.
  4. Stirring often roast besan till it's colour change & becomes aromat.
  5. Add the spinach puree to the roasted besan.
  6. Mix well.
  7. Add 1/2 tsp of garam masala & salt.
  8. Mix it well & let it cool down. Refrigerate for 20 minutes.
  9. Grate 100 gram paneer in a bowl.
  10. Add salt & 1/2 tsp of garam masala in it.
  11. Mix well.
  12. Make small balls out of it.
  13. Take out the spinach from the fridge & make balls out of it.
  14. Flatten them & keep aside.
  15. Place one ball of paneer in the centre.
  16. Bring the edges to the top.
  17. Join the edges & roll gently to a smooth kofta.
  18. Sprinkle 1 tsp of cornflour on the plate & coat all koftas with it,Dust off the excess flour.
  19. Heat oil in a karahi & deep fry one by one koftas.
  20. Put all on the tissue paper to absorb excess oil.
  21. Heat 2 tbsp of oil in a pan with cuminseeds,cloves, cinnamon stick,cardamom.
  22. Fry till the spices splutter& becomes aromat.Add chopped onions & cook till they become transculant.
  23. Now add chopped garlic & ginger Saute them,add chopped tomatoes, mix & saute for one minute.
  24. Add cashews.
  25. Mix well & add 1/4 tsp turmeric powder,1 tsp red chilli powder.mix bhi well.
  26. Add 1 cup of water.
  27. Cook till tomatoes become soften.switch off the flame & let it cool down.
  28. Add this mixture to the grinder jar.
  29. Don't add water
  30. Pour this mixture in a pan.
  31. Add 1/2 cup of water.
  32. Add salt & sugar as per taste.cook on a low flame.stir at intervals.
  33. Add kasuri methi in the gravy,mix well & switch off the flame.
  34. Pour the hot gravy to the seving bowl,slice each kofta in to two halves.
  35. Gently add the spinach paneer kofta halves in the gravy.
