On medium heat, add oil, saute ginger, garlic, once aromatic, add vegetables and stir fry until half done, add water, seasoning mix and let it braise the vegetables for about 5 minutes, add corn starch and let it thicken slightly, now add tofu and lightly stir, let it cook for another 5 minutes, turn heat off and serve immediately.
