Instructions to make Potato vadas:
- Firstly boil potatoes.
- The next step is to make batter. Take chickpea flour in a bowl. Add one teaspoon of red chilli powder and one teaspoon of salt or according to your taste. Add water and mix well. This paste should have a thick consistency.
- Now take green chillies, coriander, ginger and garlic and grind in a thick paste. Be careful you don't have to add water.
- Next is to heat 2 tablespoons of oil in a Kadai or a frying pan. Add this green paste and stir well for 5 minutes until you get a fine aroma. Please take care that this paste is cooked well.
- Now add this fried paste in a bowl of mashed potatoes. Mix really well and and shape the mixture into small balls.
- Again heat oil in a kadai. Make sure this utensil is thick enough and has nice depth. Now dip these potato balls in chickpea flour. Coat them well. When the oil gets hot, add the potato balls in the Kadai, and they should float well in the oil else the flour batter sticks to the bottom of the kadai/pan. Fry them until golden brown.
- Now serve them with dry garlic chutney or mint chutney.
