Dahi vada are a craze at home and I do make them at times as they require some prep work to be done beforehand. Like making both the spicy green coriander chutney and sweet tamarind. Dahi vada is very common in different parts of India, so as aloo dum. But this combination is something you would find only in Odisha.
Steps to make Odia sweet dahi vada and aalu dum:
- For vada. Soak lentils and rice for 5 hours. After did grind it in smooth batter
- Beat with hand. Mix cumin seeds. Red chilli and salt
- Make vada shape and deep fry till golden brown. Dip in milk
- Now add sugar,salt,black pepper,rock salt,mango ginger,plain ginger,mint and core under chopped leaves in curd
- Now take a pan. Add oil. Add curry leaves,mustard,red chilli,,,fry and cool it. Pour this on curd
- Now mix vada in curd,take out from milk
- For aalu dum,,take a pan heat oil,add chopped onion,chopped tomato,,ginger garlic paste. Garam masala, Add red chilli and turmeric,,cumin coriander powder,salt,,cook it well for 10 min on low flame
- Now add potato cook for 15 min..add coriander leaves
