The ingredients needed to make Batata Vada:

  2. Make ready 3-4 boiled potatoes mashed
  3. Prepare 1 tbsp oil
  4. Take 1 tsp cumin seeds
  5. Take 1 tsp whole coriander seeds
  6. Make ready 1 tsp garam masala
  7. Get 1 tsp red chilli powder
  8. Get 1 tsp ginger and garlic paste
  9. Make ready 1 green chilli finely chopped
  10. Make ready 1 tsp dry mango powder
  11. Make ready 1 pinch Asafoetida (hing)

  13. Take Handful coriander leaves
  14. Make ready For Batter:
  15. Get 1 cup gram flour (besan)
  16. Take 1/2 tbsp Salt
  17. Make ready 1 pinch baking soda
  18. Make ready 1/2 tsp turmeric powder
  19. Get 1/2 glass water
  20. Take For Frying:
  21. Prepare 1 cup Oil to fry

Batata vada recipe - one of my favorite and one of the popular Mumbai street food. This can be eaten as a snack with chutney or used in making vada pav.

Steps to make Batata Vada:
  1. In a pan heat 1 tbsp oil on a low flame, add cumin seeds, coriander seeds, Asafoetida and ginger garlic paste. Mix and cook until the raw smell from ginger garlic goes away. (Takes 1 min).
  2. Next add red chilli powder, garam masala and dry mango powder. Mix well and add mashed potatoes along with salt and coriander leaves. Give a good mix.Turn the flame off.
  3. Once the above mixture cools down to the room temperature, Make small balls and pat them flat on your palm. Keep it aside.(it makes approx 6 wadas out of 3-4 potatoes).
  4. In another bowl take gram flour, add salt to taste, turmeric powder and baking soda. Mix everything and add water to make little thick flowing consistency. Keep it aside.
  5. Heat oil in a pan for frying on a medium flame. Once the oil is hot. Take one vada at a time (made in step 3) dip in the batter (made in step 4).
  6. Slowly leave the dipped vada in the hot oil. Fry them from both sides till light golden brown by flipping them in between.
  7. Remove it on a tissue paper or paper towel.
  8. Follow the process for the remaining wadas.
  9. Serve hot with or without Pav/Bread along with chutney and fried green chilli.
