This recipe gives you a super delicious Sabudana Vada that is crispy from outside with a soft and light texture from inside. The recipe for Sabakki Vada/Sago Patties was told over phone by my friend Seema and I just tried this appetizer/snack for the first time.

The ingredients needed to make Sabudana Vada / Sago Patties:
- Prepare 1/2 cup Sabudana/Sago
- Prepare 2-3 boiled Potato, mashed
- Get 1 Green chilli, chopped
- Take 1/2 cup Less than Kuttu aata/Buckwheat flour
- Prepare 1.5 tsp grated ginger
- Take 1 tsp Red chilli powder
- Take 1 1/2 tsp Coriander powder
- Make ready 1/4 tsp Black pepper powder
- Get as required Vegetable oil for deep frying or shallow frying
- Prepare as required Rock salt
- Take As required Fresh Coriander leaves, chopped (optional)
Sabudana Vada is one of the most popular snacks from Maharashtra. Sago/Sabudana pearls along with potatoes are deep fried to make these crisp indulgent Vadas. Sabudana vada with step by step photos. Sabudana vada or Sago vada is one of the popular Maharashtrian recipes made during Navaratri fasting(vrat).
Instructions to make Sabudana Vada / Sago Patties:
- Add 1/2 cup of sabudana in a bowl, rinse them 2-3 times. Drain the water and soak them in one and a half cup of water.. for at least 6 hours. Once they are soaked well, drain the water and transfer the soaked sabudana in a mixing bowl.
- Add mashed potatoes, chopped green chillies, red chilli powder, coriander powder, black pepper powder, dry ginger powder, chopped coriander leaves, grated ginger, rock salt and Kuttu aata.
- Combine everything well. If the mixture is sticky then grease your palms with oil and make flat patties (as shown in images.)
- Now heat oil in Kadhai. Drop these patties carefully in Kadhai. Fry these on medium-low heat, till they turn golden brown and crisp. Once done from both sides, transfer these on plate.
- Serve hot with tamarind or coriander chutney.
This is the first time I am trying my hands at this vada recipe should say it was a hit at home. Crispy and crunchy Sabudana Vada are the perfect tea time snack!
