  1. For Batter. In a bowl put besan.Add salt, turmeric powder, red chilli powder. Now add little water and mix into a smooth thick batter. Add water if required. Batter should neither be too thick or thin.Add baking soda and again mix well.keep it aside.
  2. Heat 2 tablespoon oil in a pan. To it add mustard seeds, asafotedia and curry leaves. When they crackle add green chilli-ginger-garlic paste and saute for 1 to 2 minutes.Now add turmeric powder red chilli powder, mashed potatoes and salt and mix keeping it on a very low flame.Allow the mixture to cool.Then add lemon juice coriander leaves and mix properly again with hand.
  3. Divide the mixture into equal portions and shape into round balls.
  4. Heat sufficient oil in a pan.Dip the balls into the batter and deep fry on a medium flame till they turn golden and crisp.
  5. Now slit the Pav from the centre from one side. Apply some butter on both the sides of the bread.Then spreadgarlic or green chutney of your choice in the Pav. Place the Vada in the centre and press the Vada Pav.Serve immediately. ENJOY 🙂
