- Prepare 1 cup chickpea flour
- Prepare to taste Salt

- Take 1/4 tsp baking soda

- To make Pav
- Take a bowl.
- Add milk, yeast, salt and sugar into it.
- Using beater beat it using dough cutter for 2-3 minutes.
- Now add all-purpose flour into 2-3 batches and mix it really well using whisker.
- Knead the dough using beater machine.
- Dough should be lumpy in texture.
- Now on clean platform dust all-purpose flour.
- Remove the dough from bowl and take it on dusted platform.
- Now add oil in 2-3 batches and massage it. (Like making fafda)
- Now tuck in the dough and on dusted platform keep it for 10 minutes.
- Dust all-purpose flour on the dough and cover it with muslin cloth.
- After that lightly punch the dough and tuck it in again.
- Now make 60-80 gram balls from dough.
- And keep it in greased baking mold.
- Keep space between dough.
- Now without tapping just cover it again with muslin cloth and keep it for proving for 25-30 minutes.
- Now after 30 minutes you will see the dough doubles in size and stick with each other.
- Just spray some water on dough.
- After that put this mold in oven for baking on 180 degree for 15-18 minutes.
- After baking immediately brush milk on pav and let it cool down for 10 minutes.
- Now remove the ladi pav from mold and cut it.
- Store it into zip lock bag or air tight container.
- To make dry red chutney
- Take a pan and dry roast the chilli on low flame for 1-2 minutes.
- Remove it from pan and keep it aside.
- Now dry roast garlic, peanuts and coconut powder.
- Now let it cool down.
- Now take a food processor and in the jar add roasted ingredients and crust it.
- Now add salt and chilli powder and crush it again.
- Remove it in bowl and keep aside.
- To make Green chutney
- Take a food processor jar.
- Add coriander, chilli and ginger and add little water and grind it well.
- Now add salt, lemon juice and black pepper powder and add little water and again grind it.
- Chutney should be thick in consistency.
- Remove it into a bowl and keep aside.
- To make Vada
- Take a pan and oil into it.
- When oil turns hot add mustard seeds and let it crackle.
- Now add asafoetida green chilli paste and ginger paste and mix it well.
- Add turmeric powder and salt to taste.
- Now add boiled and mashed potatoes and mix it well.
- Add fresh coriander leaves and mix it well and turn off the flame.
- Now let it cool down.
- Meanwhile to make better take a bowl.
- Add chickpea flour and salt into it and mix it well.
- Now add water little by little and make thick better.
- Keep it aside.
- Now make balls from the potato mixture.
- Take a frying pan and add oil into it and let it turn hot.
- Now in the better add baking soda and little water and mix it well.
- Now deep the ball into it and put it into a piping hot oil.
- Fry Vadas until little golden.
- Remove it and keep it on kitchen towel.
- Fry green chillies too.
- Now to assemble Vada Pav take 2 Pav and cut it from middle.
- Spread butter, green chutney and sprinkle dry red chilli powder.
- Assemble Vada and cover it.
- Serve it with green chillies.
- Serve hot.
