- Mix fish sauce, 1 Tbsp lime juice, chopped shallots and chillies in the serving bowl. You can adjust this up to your taste.
- Assemble them on the plate and serve.
The fish is cleaned, the sides slashed and the fish is either dredged in flour or coated with a light batter, and then deep fried in fairly hot oil for about five minutes each side. The fish is then removed to a large plate or serving platter. Remove the fish and drain on kitchen paper. Return the fish to the wok and reheat through. Serve at once with the garlic cloves.
