  7. Mix fish sauce, 1 Tbsp lime juice, chopped shallots and chillies in the serving bowl. You can adjust this up to your taste.
  8. Assemble them on the plate and serve.

The fish is cleaned, the sides slashed and the fish is either dredged in flour or coated with a light batter, and then deep fried in fairly hot oil for about five minutes each side. The fish is then removed to a large plate or serving platter. Remove the fish and drain on kitchen paper. Return the fish to the wok and reheat through. Serve at once with the garlic cloves.
