  5. In a bowl take 1/2 cup Besan, a pinch of turmeric powder, salt, baking soda and ajwain. Add water as required to make a smooth batter.
  6. Take a small ball of the potato mixture, dip it in batter to coat well and deep fry it in hot oil.
  7. Fry the vadas on medium flame till they turn golden brown.
  8. Take them out on a tissue paper to remove excess oil.
  9. Now, turn off the stove and fry a few green chillies in the hot oil. Put on the lid as it may splatter. After it turns slightly white, take it out and sprinkle with salt.
  10. For arranging the vada pav, slit the pav from middle and apply tamarind chutney on one side and dry garlic chutney on the other.
  11. Slightly flatten the vada and place it between the pav. Serve it hot with fried chillies!
