Instructions to make Pakistani zarda:
- Soak rice for 2.5-3 hour.
- Boil with 1.5-2 lit water (use large size pan). Add food colour (as much dark colour you required) few drops of oil and few drops of lemon juice/vineger. Boil till almost rice cooked. Drain water and keep rice aside.
- Heat oil in pan add clove and cardamom and stirr till a fine aroma evolved.
- Place boiled rice in large pot in layer, alternate with layer of sugar. Pour heated oil at top and keep the pot direct on medium to high flame for 5 minutes, till the entire sugar melt down into watery liquid.
- Add all the additives (nuts, sweet ball, asharfi) on top or add during serving.
- Now put the pot over pre-heated steamer (tawa). Tightly close the pot lid. And slow down the flame to make a steam inside. Wait for 15-20 minutes. Till all the moisture dries up and rice get fully cooked and softens.
- Now the zarda is ready to eat
