Tender coconut pudding with fresh pulp, water from tender coconut, prepared with agar agar (china grass), milk, condensed milk as main ingredients. Now, add agar agar mixture, ground tender coconut and mix. Pour the tender coconut pudding mixture immediately into moulds.
Steps to make Tender coconut and pomegranate cheesy pulao:
- Heat 1 tbsp homemade ghee in a pan. Add 1 cup tender coconut slices and roast well. Keep aside.
- Heat 1 tbsp homemade ghee in a pan. Add 2 tbsp chopped walnuts and roast well. Keep aside.
- Heat 1 tbsp homemade ghee in a pan. Add 1 cup chopped celery and 1/2 cup mint leaves and roast well. Keep aside.
- Heat 1 tbsp oil in a pan. Add 2 tbsp butter. Add 1 tsp cumin seeds and let them crackle.
- Add all the whole spices and saute. Add 1 chopped red chilli and mix well.
- Add the 1 tbsp ginger-garlic paste and mix well. Add 1 cup sliced onions. Let them turn soft.
- Add 1 cup rice and water equal to 4 times the rice. Give it a gentle stir, cover and let the rice cook.
- The add 1 tsp sugar, salt as per taste. Mix it gently.
- Add half of the roasted tender coconut and half of the pomegranate to a mixer and blend well. Add this mixture to the rice and stir gently.
- Then add 1 tbsp homemade ghee, remaining roasted tender coconut, pomegranates, roasted walnuts, roasted celery & mint leaves. Stir.
- Then grate 1 cheese cube over the rice. Cover and let it remain on low heat for about 2-3 minutes. Remove from flame and serve hot.
