  20. Get as needed cooking Oil

Along with a hot and spicy garlic chutney, batata vada pav is served inside a small "Ladi Pav". Vada Pao, Wada Pav, or Wada Pao is a budget-friendly and gratifying Indian Style Burger which hails from the streets of Mumbai. The origin of this sandwich is the Indian state of Maharashtra. Steps to make Vada pav:
  1. Microwave 2 big potatoes for 8 minutes to become soft. You can boil the potatoes in water also.
  2. Peel and mash with a fork.
  3. Take 5-6 garlic cloves, 2-3 green chillies and a bunch of coriander leaves.
  4. With the help of a grinder, grind to a coarse paste.
  5. Add in this paste to the mashed potatoes. Also add in salt and a pinch of hing or asofetida.
  6. Mix well so that the paste incorporate to the mashed potatoes.
  7. Make small round tikkis out of the mixture. You can also make ladoos to get the traditional size of vada. I like them in Tikki shape as these are easy to stuff.
  8. For the coating mix 1/2 cup of besan with 1/2 cup of water to make a little thin batter. Add salt and a pinch of soda.
  9. Heat sufficient oil in a kadai or yok.
  10. Coat each vada with the prepared batter and dunk it to the hot oil.
  11. Fry them in medium heat on both sides until golden brown.
  12. Transfer to an absorbent paper.
  13. For the garlic chutney take 10-12 garlic cloves to a pan with few drops of oil. Fry for 3-4 minutes.
  14. Next add in 2 teaspoon of white sesame seeds and fry for another 2 minutes.
  15. Switch off the flame and add in 1/4th cup of desiccated coconut and 2 teaspoon of kashmiri red chilli powder.
  16. Mix well and transfer to a grinder. Add in salt as per your taste.
  17. Grind to a dry powder. Note that pulse the mixture for few seconds in frequent intervals. This will help the mixture to remain dry. Otherwise, oil starts separating from coconut and sesame seeds.
  18. For assembling take some ladi pav or any kind of bun(not sweet), cut in halves and spread some garlic chutney as shown in the picture.
  19. Stuff the prepared potato vada to each pav and serve immediately.
