  3. Once it's blended add salt and whisk the mixture for 4-5 minutes. Keep aside for 15- 20 mins.
  4. Heat oil in kadai, we your hands and drop small portions of dal mixture in hot oil and fry on low medium flame so that it cooks properly from inside.
  5. Once it's golden evenly from all sides remove and keep aside.
  6. For kadi.
  7. In a bowl take buttermilk and add besan and mix properly so no lumps are formed
  8. In case you are using curd, whisk curd, water, besan properly for smooth buttermilk mixture.
  9. In a kadai heat oil add mustard seeds, cumin seeds, hing, methi seeds, grated ginger, red chillies, chopped green chillies, curry leaves and fry tadka on low flame nicely.
  10. Add the buttermilk mixture and add salt. If the buttermilk is sour you can add sugar to balance the taste.
  11. Cover and allow it to boil on low flame.
  12. After 4-5 mins switch off the flame.
  13. To serve take 3-4 vadas in a bowl, add hot dahi kadi and garnish with coriander leaves and serve it's a very nice dish to start a meal as it has all flavours 😊
