- Take 1 cup or 2 cups curd buttermilk
- Prepare 1small onion
- Take 2-3 Green chillies
- Prepare 10 curry leaves
- Make ready 1 teaspoon cumin and mustard
- Make ready 1 small tomato
- Prepare 2 tablespoon oil
- Prepare 1handfull coriander leaves
- Get to taste Salt
A good way to use left over curd / buttermilk is to prepare this dish. This dish is very close to kadhi prepared in Gujarat & Maharastra. This is a very popular dish in North Karnataka. However, they make this dish very thick like a sambar using a lot of gram flour.
Instructions to make Majjige saru / buttermilk sambar:
- Churn the curd into buttermilk add water according to your preference
- Heat oil in wok, add cumin, mustard and green chillies
- Add curry leaves and onions
- After onions are done add chopped tomatoes and salt cook till mushy. And take it off from the flame and add coriander leaves.
- After it cool down add buttermilk and mix well.
- Serve it with hot rice.
Infact, the thicker version of this saaru is majjige huli (mor kolambu/yogurt curry) for North Karnataka people. Buttermilk is known for its hydrating and refreshing properties. In Kerala, traditional Nair families used to give mildly spiced buttermilk or Sambharam to their guests.
