The sambar recipe is generally a lentil based vegetable stew made with tamarind. And of course, less oil can reduce the likelihood of breakouts and blackheads. Heat oil in a thick-bottomed pan, fry the mustard and cumin seeds, curry leaves until they splutter. Add salt, chili powder, sambar powder and mix well.

  1. Wash the dal and add around 3 cups water.
  2. Add salt, turmeric, mustard seeds, methi seeds, curry leaves, dry red chillies, hing and all the veggies roughly chopped and pressure cook till the first whistle and then simmer the gas for 5 minutes.
  3. Once the pressure releases…. open the lid and switch on the gas. Add tamarind juice and mtr sambar masala powder and bring the dal to a boil and simmer for 2-3 minutes.
  4. Garnish with green coriander leaves and serve with idli, dosa or uttapam.
