  6. Fry the bacon and onion in a pan with a little olive oil and butter if you like, use a slotted spoon to transfer the spätzle into the frying pan. Stir over a lowish heat for a couple of minutes then add more chopped herbs (opt)
  7. Add some of the parmesan into the pan and stir, if the mixture is a little dry reserve some of the cooking water to add. I poured in about 50 ml to moisten the dish, if you added too much just stir over the heat until it evaporates.
