The ingredients needed to make Sambar:
  1. Get 1 cup Toor Dal
  2. Get 2 cups water
  3. Make ready Lemon sized Tamarind
  4. Take 2 tomatoes
  5. Make ready 2 drumsticks
  6. Prepare 1 Raw Banana
  7. Take 2 Big onions or 15-20 Sambar Onions
  8. Prepare 1 Big Madras Cucumber
  9. Prepare 2 Big carrots
  10. Make ready 10-15 Lady Fingers (optional)
  11. Take Salt as per taste
  12. Get 3 tsp Sambar Powder
  13. Make ready 2 tsp Red chilli Powder
  14. Take 3 sprigs Curry leaves
  15. Prepare 2 tbsp oil
  16. Make ready 1 tsp mustard
  17. Make ready 1 tsp Jeera
  18. Get 4-5 garlic pods
  19. Get 1/4 tsp hing
  20. Make ready 1/4 tsp turmeric
  21. Take Water as required

Sambar is a traditional South Indian stew that goes well with idli, dosa, steamed rice or can be served as a soup. Any South Indian meal, be it breakfast, lunch or dinner, would be considered incomplete without Sambhar or one of its variants. Sambar, a hot and spicy lentil soup with mixed vegetables, is a must have accompaniment for popular South Indian breakfast and lunch recipes like Idli, Dosa, Medu Vada, Steamed Rice etc. A few years back Sambar used to be defined as South Indian delicacy, confined only to the Southern states of India.

Instructions to make Sambar:
  1. Wash and clean toordal, put two cups of water and cook it in a cooker for 3 whistles
  2. Keep vegetables ready and wash and peel as required
  3. Cut vegetables in your desired shape.
  4. Put a vessel on stove, pour 2tbsp oil. Add mustard and jeera, when they start splitting add hing and turmeric. Mix well. Put all the cut vegetables. Cut banana just before adding it to the remaining vegetables.
  5. Add Salt and put 1 cup of water for the vegetables to cook. Add tomato after 5mins. Cover the vessel with a lid and cook the vegetables for 10 to 15mins
  6. After 3 whistles, let the dal cool. Mash the dal
  7. Soak tamarind in water to extract the pulp
  8. Now add the cooked vegetables in the mashed dal and let the vegetables cook in the dal.
  9. Mix well. Add tamarind pulp and water as required. Sprinkle curry leaves
  10. Once sambar starts boiling, add sambar powder. Mix well.
  11. Finally, add red chilli powder, mix well and take off the stove. Put a sprig of Curry leaves.
  12. Serve with white rice.

I have used homemade sambar powder to make sambar recipe. But store-bought powder will work Wash and chop all the veggies you want to add to the sambar. I have used carrots, baingan (small.
