- Wash brinjal, cut into 4, marinate with chilli powder, cumin powder and salt
- Fry all the dry ingredients and grind along with soaked red chilli as paste with vinegar and little water
- Keep a pan, add oil, fry marinated brinjal, for 10min in medium flame. Now add the ground masala, salt and keep cook in low flame for another 10min (add water if necessary)
- Now add tamarind paste and sugar keep cook in low flame until brinjal become soft
- Serve with coconut rice
